Huckleberry thumbprint cookies

2 cubes (1 cup) margarine, softened

1 cup brown sugar

2 eggs, separated

2 cups flour

Ground walnuts

Huckleberry jam

In a mixing bowl, cream together margarine and sugar; add egg yolks and mix until smooth. Combine with flour and shape into 1-inch balls.

In a small bowl, lightly beat the egg whites with a fork; dip dough balls in egg whites and roll in the ground walnuts.

Place dough balls on a cookie sheet and bake at 325 degrees for 5 minutes. Remove from oven and make a thumbprint in the center of each cookie, then fill each with 1/2 teaspoon huckleberry jam.

Return to the oven and bake 10 minutes longer. Allow cookies to cool before removing from cookie sheet.

Makes about 5 dozen.

Note: Recipe calls for no salt, baking soda or baking powder.

Wild Huckleberry and Cherry Almond Shake
serves 2
1/2 cup cherries, pitted
1/2 cup wild huckleberries
1/4 cup almond butter
2 fresh dates, pitted
1 tsp honey
pinch himalayan salt
3-4 cups filtered or spring water
Blend all ingredients in high power blender until creamy and serve!
Alternative method: use 1/2 cup almonds instead of almond butter and blend with 3 cups water until smooth. Strain with a fine mesh bag and pour almond mylk into blender with remaining ingredients and blend until creamy.

  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla
  • 3 tablespoons vegetable oil
  • 1 cup huckleberries

Directions:

  1. Preheat oven to 350 degrees. Prepare a 9-inch loaf pan with cooking spray or butter.
  2. Combine flour, sugar, baking powder and salt in a large mixing bowl.
  3. In a separate bowl, whisk eggs and then add milk, vanilla and oil. Add egg mixture to dry ingredients. Try not to over mix.
  4. Fold in huckleberries.
  5. Pour batter into pan.
  6. Bake for 1 hour or until inserted knife comes out clean.
  7. Cool and THEN remove from the pan (otherwise it’ll stick and you’ll get half a loaf in and out of the pan).

Huckleberry slump

Prep: 20 minutesCook: 30 minutesMakes: 6 servings

This is a colonial New England specialty that has become a part of the culinary tradition of the Pacific Northwest. Adapted from “Northwest Bounty” by Schuyler Ingle and Sharon Kramis.

6 cups huckleberries or blueberries

1 cup sugar plus 1 teaspoon

1/4 cup orange juice

1 teaspoon cinnamon

1 1/2 cups flour

1/4 teaspoon salt

1 1/2 teaspoons baking powder

1/2 stick (1/4 cup) chilled butter, cut into small pieces

1/2 cup half-and-half or milk

1 cup whipping cream

1/8 teaspoon freshly grated nutmeg

1 Combine huckleberries, 1 cup of the sugar, orange juice and cinnamon in a large saucepan. Heat huckleberries to a boil over medium-high heat. Cook until slightly thickened, 5 minutes.

2 Mix together flour, salt and baking powder in a medium bowl; cut in butter until size of peas. Add half-and-half; mix lightly to form a soft dough. Drop dough by spoonfuls onto huckleberries; cover. Reduce heat to a simmer. Simmer until dumplings are cooked through, 30-40 minutes.

3 Meanwhile, whip cream with the remaining 1 teaspoon of the sugar and nutmeg until soft peaks form. Serve slump in shallow bowls with the whipped cream.

Ingredients

 2 cups huckleberries
 2 cups tart apples, peeled and sliced
 1 Tbsp. lemon juice
 1/2 cup brown sugar, packed
 1 cup all-purpose flour
 3/4 cup granulated sugar
 1 tsp. baking powder
 1 egg, slightly beaten
 1/2 cup margarine, melted
 1/2 tsp. Cinnamon

Directions

Butter 1 1/2 qt.baking dish.
Put in huckleberries and apples.
Sprinkle with lemon juice and brown sugar.
Mix next four ingredients, stir in egg and mix until crumbly.
Sprinkle over fruit.
Top with melted margarine and cinnamon.
Bake 350°F.
40 minutes.

An activity I love to do in the Kootenays during the summer is to forage for huckleberries. This past week while visiting my parents I had the opportunity to go out to our favorite spot in the Monashee Mountains and pick.

2 eggs (yolks and whites separated)
1 3/4 cups milk
1/2 cup vegetable oil
1/2 teaspoon vanilla
2 cups flour
2 tablespoons honey
4 teaspoons baking powder
1/4 teaspoon salt
1 cup fresh huckleberries

Start by mixing the yolks and the whites in separate bowls until they are light and fluffy. Then mix in the remaining wet ingredients into the yolks until well mixed. In another bowl combine the dry ingredients until well mixed. Then slowly mix the dry ingredients into the wet ingredients. Fold in the egg whites until just mixed in. Finally add the huckleberries.

Huckleberry Syrup

This is a completely basic recipe, which makes it equally as good on pancakes as over cheesecake.

Ingredients:
2 C huckleberries (if frozen, thaw in the saucepan before adding remaining ingredients)
1 C water
1/2 C sugar
1 Tbsp cornstarch (or 2-3 Tbsp flour)
1 Tbsp cold water
juice of one lemon
zest of one lemon (optional)

Directions:

  1. Combine huckleberries, water, and sugar in a small saucepan over medium heat.
  2. While berries are warming, in a small bowl, mix cornstarch and cold water. Add to saucepan.
  3. Add lemon juice (and zest) to saucepan.
  4. Bring sauce to a boil. Reduce heat to a simmer. Cook another 5 minutes.
  5. Remove from heat and allow to thicken for 10+ minutes.

Huckleberry Ginn

Makes: Two cocktails

The earthy pine-iness of the gin blends effortlessly with the sweet and tart berries, invoking images of days so humid you can’t move. I can’t help but reference Twain in the drink’s name — kind of makes me want to find a river raft to float away on. Reduce the amount of simple syrup and use club soda instead of Sprite if you don’t like your drinks too sweet — it’ll be lighter with more nuanced flavors.

Ingredients:
1 Cup huckleberries (fresh or frozen)
3 oz/2 jiggers gin (I like Tanqueray)
1/2 oz simple syrup
12 oz Sprite or club soda

Directions:

  1. Add huckleberries and gin to a blender; blend until mostly smooth.
  2. Add simple syrup. Blend briefly.
  3. Place a mesh strainer (small, preferably — and I don’t mean the kind in a bartending toolkit) over a low-ball glass and pour half the gin mixture through it, removing the large chunks. Do the same for the second glass.
  4. Top with soda and add ice. Embrace the humidity.

Huckleberry Banana Shake

  • 1 ripe banana    ( I throw them into the freezer when they get too ripe, then they are always at hand for shakes or baking.)
  • 1/2 cup ice cubes
  • 1/2 cup huckleberries ( or frozen blueberries )
  • 1/4 – 1/2 cup milk
  • 1/2 tsp vanilla
  • 1 tablespoon honey or maple syrup

Put all ingredients into a blender and blend.  It will be thick enough to eat with a spoon.  If it’s too thick for your liking add a bit more milk.  Enjoy

Sift together flour, baking powder, salt and sugar.
Beat egg yolks.
Add to margarine.
Stir into dry ingredients.
Do not stir out all lumps.
Beat egg whites stiff.
Fold into batter along with berries.
Bake on preheated waffle iron.
