Tastes of Idaho lists NUMEROUS huckleberry products from companies located in Idaho.  You’ll find items such as the standard huckleberry jam and syrup, but also huckleberry bbq sauce, huckleberry chocolate bars, huckleberry honey, appleberry hucklebutter, huckleberry lemonade, huckleberry lip balm, huckleberry soap and lots and lots more!

Gem Berry Products are famous the their huckleberry and huckleberry/raspberry (razzleberry) products.  They also feature a beautiful line of gift boxes with various different products.

Gold Mountain Gourmet has a classy line of foil labeled products.  Their best sellers are huckleberry almond granola and 8 oz. huckleberry coffee in regular, decaf or whole bean varieties!

Idaho (or BackCountry) Redneck is a great line of products if you are looking for a humorous label.  This site features several assorted huckleberry products along with a line of non-huckleberry sauces.

Huckleberry Yogurt Dressing or Dipping Sauce

We are sharing a favorite recipe from the Huckleberry Cookbook by Alex and Stephanie Hester

Give an ordinary fruit or fruit salad some extra punch with this wonderful dressing.

1 cup plain yogurt
¼ cup of honey
Juice of 1 lemon
Zest of 1 lemon
½ cup huckleberries
Fresh cracked black pepper

Combine yogurt, honey, lemon, zest and huckleberries in an electric blender and mix well.  Add black pepper to taste.  Use as a dipping sauce for your favorite fruit or toss with a combination of fresh or frozen fruit.

Pan-Seared Salmon with Huckleberry Sauce

This week’s recipe is from my favorite Huckleberry Cookbook by Alex and Stephanie Hester (Currently on SALE!)

Pan-Seared Salmon with Huckleberry Sauce

4 salmon fillets
2 tablespoons olive oil
Salt and pepper
1/3 cup of water
1 cup fresh huckleberries
1 tablespoon of sugar
1 lemon, juiced
¼ cup fresh basil, finely chopped

Heat skillet over high heat.  Add olive oil.  Salt and pepper both sides of salmon fillets.  When pan is hot add fillets, skin side down.  Sear for approximately 4 minutes per side.  Remove from pan and let rest.

Reduce heat to medium.  In the same pan used to fillet fish add water and huckleberries.  Simmer until tender.  Add sugar and simmer two to three more minutes.  Lastly, add lemon juice and basil.  Remove from heat and let stand a few minutes.  Drizzle sauce over salmon fillets.

Serves 4
