Rib Eyes with Huckleberries and Caramelized Onions

Ingredients
- 1 tablespoon unsalted butter
- 1 teaspoon olive oil
- 2 cups thinly sliced sweet onions
- Pinch of salt
- 1/2 teaspoon black pepper
- 1/2 cup fresh huckleberries (I would think frozen would work too!)
- 4 rib-eye steaks
- Grilling spice of your choice
Instructions
- Prepare rib eye by rubbing in grilling spices on both sides of steak and set aside.
- Melt butter and olive oil together in a large frying pan.
- Over medium hear, saute the onions until translucent.
- Add salt and pepper, and cook for an additional minute.
- Add huckleberries and cook until onions become caramelized -- brown and crispy.
- Preheat the grill to 400 degrees and cook the rib eyes to the desired doneness.
- Serve the onions on top of the steaks.
